BIRRIFICIO MASTINO

Birra Mastino is the craft brewery of the wonderful city of Verona. And it is precisely this city which inspired the name of the brewery itself, the brand and the names of all different types of beer.

Born more than ten years ago, only since 2015 the brewery has seen a rapid development in terms of production and organization, which led to offer particular and unique craft beers.

The main vocation of Birra Mastino is represented by a process of low fermentation, which harks back to the major brewing tradition. The incredibly careful selection of raw materials and the constant research of production techniques represent the characteristic features which allow the brewery to offer beers always extremely balanced and stable with regard to taste and quality.

As craft beers, special attention is given to the ripening process, which occurs in horizontal tanks. This allows the brewery to make Mastino beers clean and clear, without using the filtration process.

Each beer recipe is conceived by Mauro Salaorni and Christian Superbi, the two Birra Mastino’s partners; they both made their way in the brewing world even before the birth of the brewery itself: Mauro started working in his family restaurant, while Christian in different beer companies.

The perfect combination of Mauro’s field knowledge of this sector coupled with Christian’s management skills has gotten Mastino brewery this far. Birra Mastino means passion, tireless spirit of research and tradition: hence, this beer could be defined… “Artigianale Veramente” (“truly craft beer”).

BIRRIFICIO MASTINO

Birra Mastino è il birrificio artigianale della città di Verona, alla quale si ispira il marchio oltre a tutti i nomi delle birre.
Nato più di dieci anni fa, solo dal 2015 ha visto una rapida evoluzione in termini produttivi ed organizzativi, che hanno portato a proporre birre artigianali dal carattere unico e distintivo.
La vocazione principale, maturata nel tempo è orientata alle basse fermentazioni, con birre in stile che si rifanno a questa importante tradizione brassicola.
L’ attenzione alla selezione delle materie prime e lo studio e la ricerca continua delle tecniche di produzione sono i caratteri distintivi che permettono al birrificio di proporre birre sempre ben bilanciate e molto stabili.
Essendo birre prodotte con metodo artigianale, particolare attenzione viene dedicata alla maturazione che avviene in serbatoi orizzontali per renderle pulite e limpide senza bisogno della filtrazione.
Ogni birra viene ideata e pensata da Mauro Salaorni e Christian Superbi, i due soci del birrificio, poi a Mauro spetta il compito di produrle e affinarle, mentre a Christian spetta il compito di raccontarle e dar loro un ruolo sul mercato.
Passione, ricerca e storia sono la Birra Mastino, una birra che si può decisamente definire … Artigianale Veramente.

Raw Materials

With a huge satisfaction and after a long search, today Birra Mastino proudly deals with self-made raw materials.

The idea of brewing one’s own beer with what the local territory could offer has always been one of the brewery clearest goals.

Finally, through careful studies, Birra Mastino boasts its own barley production, which is grown in the fertile plain just a few kilometers far from the brewery.

Recently, Mastino brewery has also started a new hops project; in this case hop plants are grown on the hills around Verona, where the best conditions for the growth of hop plants have been identified.

All hop plant varieties are cultivated on six meters high rows; other varieties are grown thanks to the collaboration of expert agronomists and specialists. This hops quality has nothing to do with envy to the much more famous German or American hops.

The continuous research for high quality of the used raw materials is Birra Mastino’s ultimate purpose, which encouraged the brewery itself from the very beginning.

Production

are produced within a 600 square meters area.

The brew-house is a classic 3000 liters three-barrel system, designed by the brewery itself to make the best of any production process (decoction, infusion, etc.)

There is also a 300 hectoliters vertical cellar where takes place the alcoholic fermentation of Mastino beers; once the fermentation phase is finished, our beers “lagerize” with the cold ripening process in a 320 hectoliters horizontal cellar.

The horizontal ripening process allows to make Mastino beers clean and clear without using the filtration process.

The ripening process (at 1°C) goes from one to three months, until the beers reach their own optimal stability.

After being transferred in bottles or kegs, our beers are stored in a cold room until their shipment: this helps to maintain the organoleptic properties as their best to get a fresh and perfect drink.

Materie Prime

Con grande soddisfazione, dopo un lungo lavoro di ricerca, il birrificio Mastino può oggi parlare di materie prime autoprodotte.

L’ idea di brassare le proprie birre con quanto offre il territorio locale è sempre stato un obiettivo ben preciso.

Finalmente, attraverso un studio accurato, si è arrivati a poter vantare la produzione del nostro orzo, coltivato nella fertile pianura a pochi chilometri dal birrificio.

Da qualche tempo è cominciato anche un progetto sul luppolo.

In questo caso la coltivazione avviene sulle colline della città, dove sono state individuate le migliori condizioni alla crescita delle piante di luppolo.

Su filari alti sei metri, vengono coltivate diverse varietà e grazie alla collaborazione di esperti agronomi e specialisti, la qualità non ha nulla da invidiare ai ben più noti luppoli tedeschi o americani.

Il fine ultimo è quello che ha stimolato fin dai primi passi il birrificio Mastino …. La ricerca continua dell’ alta qualità delle materie prime utilizzate.
